Ingredients:

• 2 1/2 cups unbleached flour
• 2 TBSP vital wheat gluten (this isn't totally necessary, but it sure does help them rise up nice and fluffy and tender)
• 1 TBSP raw sugar
• 1/2 tsp salt
• 2 1/4 tsp yeast

This is like the most brilliant thing ever, and I'm so proud of myself for this recipe!  This is how to turn your bowl of oatmeal into a big portable cookie for those days when you just don't have time to sit down and eat breakfast.

Ingredients:

• 1/4 cup rolled oats
• 1/8 cup Egg Beaters
• Liberal dash of cinnamon
• 1/4 tsp baking powder
• Splash vanilla

• 2 tsp flax seeds, ground
• 2 TBSP cold water
• 1 cup old fashioned rolled oats
• 1/2 cup whole wheat flour
• 3/4 cup old fashioned rolled oats, ground into flour
